29 Food Vendors Debuting at This Weekend’s Made in Hawai‘i Festival

 

It’s no surprise that the 31st Annual Made in Hawai‘i Festival is shaping up to be the largest ever, with a whopping 500-plus vendors over three days at the Hawai‘i Convention Center. What’s crazy is the 29 food creators from across the Islands who are making their debut at the Aug. 15–17 festival. Some, like Ali‘i Fish Market and Primal Bowls, are serving up hot, made-to-order plates, while others will have samples and packaged goodies ready to gift.

 

Check out the list below for these newbies as well as my picks (marked with an *) of creators who have piqued my appetite.

Ali‘i Fish Market

Products offered: Poke, smoked meat, fried noodles, fried chicken, fish patties, musubi and snack items. Ali‘i demoed last year; this is their first time having a booth all three days.

Atebara Chips*

Products offered: Taro, sweet potato, potato and shrimp chips flavored with adobo, sweet onion, ginger garlic and more.

In a time when chips are made from all sorts of processed foods, old-school chips are a rare breed. Atebara Chips from Hilo stand out as the oldest local chip company (established in 1936) so there’s some real cred behind this debut.

I’ve been a fan of Pierre Daguzan’s rillettes and pâtés since finding them at the farmers market—they are seriously some of the best money can buy on island. These are the purest expressions of preserved local game and offal and make any pau hana spread more luxe.

Malabi or muhallebi is a Middle Eastern rice pudding dessert that sounds creamy, refreshing and delicious for an afternoon pick-me-up. Māla-be’s bowls are plant-based, so they come with a little less guilt.
